Cauliflower & Broccoli Cheesy Recipe For Toddlers

Cauliflower is a vegetable available all round the year and it’s packed with photo-chemicals which are said to help prevent cancer. It is surprising to know that one cup of cauliflower is packed with Vitamin A, Vitamin C and even calcium.

It is recommended to give Cauliflower to babies only after 8 months as it can make them gassy.  Cauliflower and Broccoli makes a great combination for a baby as it provides a large amount of nutrients.  There was a time when Broccoli was not easily available in India or was very expensive but now it is easily available in some major cities.

Broccoli contains vitamin C, Vitamin A and beta-carotene which are essential for developing good eyesight for your baby.  It is also rich in iron. The presence of dietary fiber makes broccoli an important vegetable with natural laxative properties.

Before you introduce cauliflower and broccoli to your child make sure you buy the right ones.  Buy the ones that are not wet as they may contain bacteria causing upset stomach.  They need to be washed thoroughly under running water.  You can also dip the slices in salt water for 10 min to clean out the impurities.

Cauliflower & Broccoli Recipe Ingredients

1 cup cauliflower florets, chopped into tiny pieces
1 cup broccoli florets, chopped into tiny pieces
1 tablespoon unsalted butter
1 tablespoon whole wheat flour
half cup whole milk
half cup shredded mild white cheddar cheese (if desired)

Instructions to make Cauliflower & Broccoli Recipe:

Start with preheating the oven to 375°F (190°C). Grease a baking dish with butter.

Take a pan with two cups water and boil it. Add the broccoli and cauliflower and cook until tender, about 3 to 5 minutes. Drain and rinse under cold water; drain again. Pour the vegetables into the prepared baking dish.

Take the butter and melt it on low heat.

Whisk in the flour, let bubble for a minute or two, then slowly whisk in the milk. Let simmer for another minute, then sprinkle in the cheese (if using), stirring until melted. If the sauce is too thick, add little milk. Pour the cheese sauce over the vegetables. Stir to combine.

Now pour the mixture on to the baking tray and bake for about 15 minutes. The delicious cauliflower and broccoli porridge is ready to serve.
