Cheesy Vegetable Discs or UFOs

It is very challenging for mothers to prepare kid’s meals that are healthy and nutritious and to get them to eat all the vegetables.

Today, I’ve got a crispy tasty cheesy vegetable disc recipe which all the kids will love. I am sure the lunch box will definitely come empty. This lip smacking recipe consists of rich nutrients of vegetables and cheese. Even the fussy kids will really enjoy this dish.

You can make it during kids party, play dates or even for the day out. According to this recipe, you can include any vegetable of your choice.

How to sneak in nutrition:

You can give a non-vegetarian twist to the dish by adding minced cooked chicken and adjust the spice as per your preference. You can always add new vegetables like red cabbages, zucchini, beans or capsicum. Adding soya chunks is also a great way to increase the nutrition value. You can also add homemade paneer or tofu to make it healthier. Use ghee instead of oil to shallow fry

When the kids ask what’s it made of tell them these contain “unidentified feeding objects”!! LOL!!!! You can even try shaping it into a real UFO with a blob on top!

Here’s the lip smacking recipe of Cheesy Vegetable Disc. I hope you enjoy this cheesy treat.

Ingredients:

    • 2 Medium potatoes
    • 1 tablespoon Ghee
    • 2 tablespoon milk
    • 1 medium onion, finely chopped
    • 1 medium cabbage, finely chopped
    • 1 medium carrot, grated
    • 1 cup broccoli, finely chopped
    • 1 Teaspoon cumin seeds
    • 1/4 Teaspoon chili powder
    • 1/2 Teaspoon dry mango powder
    • Salt to Taste
    • 2 eggs, beaten
    • 1/2 cup cheese, grated
    • 1/4 cup breadcrumbs or dry roasted and finely powdered corn flakes
    • 2 Teaspoon all purpose flour or saathu maavu
    • Oil to shallow fry

Preparation Method:

Take a pressure cooker and boil the potatoes for 2-3 whistles and mash it once it is cooled.

Mashed Potatoes

Take a frying pan and add ghee, cumin seeds, onion, cabbage, carrot, broccoli. Allow it to fry for 5-7 minutes. add salt as per your taste. Add chili powder and dry mango powder.

Take a mixing bowl and add mashed potatoes, all the fried vegetables, cheese. Mix well and make sure all the ingredients are well combined. If you find the mixture soggy, you can add the bread crumbs or corn flakes powder. Add milk, if the mixture is too dry.

Make a watery paste using milk and all purpose flour or you can also beat 2 eggs.
Take a spoonful of mixture and give it a shape of a disc. Dip it into flour or egg mix and then into breadcrumbs or corn flakes powder.

Veg cultets
Shallow fry until crispy on both sides. It will take 4-5 minutes for each side.
You can also make these discs in the oven . Preheat the oven to 180C. Line a baking tray with foil and add the discs.Cook these discs for about 10-12 minutes in baking mode. Flip the discs in between.Serve this dish with homemade lemon curd dip or chutney of choice. Enjoy!
